Examples of Recipes for Wheat Allergies

1. Baked cherry tomatoes

Ingredients:

500 g tofu
6 tbsp balsamic vinegar
1 tbsp polenta grains
2 tsp chili powder
2 tsp crushed chilies
1 tbsp black pepper
2 tbsp olive oil


Method:

Cut the tofu into 1 cm thick slices. Pour the balsamic vinegar on a plate and put the tofu in it, marinate for about 20 minutes. Add the polenta grains, chili powder, crushed chilies and pepper together. Add tofu in the mixture. Heat the olive oil in a frying pan and fry tofu pieces until golden brown.

2. Crispy prawns

Ingredients:

5 large prawns, cooked and peeled
10g gluten free flour
1 tbsp corn flour
2 tsp baking powder
olive oil, for deep frying


Method:

Dry prawns with kitchen paper. Add flour, corn flour, baking powder with enough water to make a thick batter that will stick the prawns. Heat the oil in a frying Pan. Fry batter coated prawns into the oil until golden brown. Serve immediately.

3. Baked bananas

Ingredients:

2 bananas
1 tbsp soft brown sugar
2 tbsp pecan nuts


Method:

Put the bananas in their skins on a baking tray and Bake for 30 minutes or until the peel goes black. Carefully remove bananas from their skins and sliced into pieces. Sprinkle brown sugar and pecan nuts on it. Leave for a few minutes and then serve. Baked Bananas can be topped with vanila ice-cream for an extra taste.

4. Mushroom risotto

Ingredient:

100 g risotto rice
2 tbsp olive oil
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
100 g mushrooms, sliced
550 ml wheat free/gluten free vegetable stock
1 tsp dried oregano
1 tsp black pepper


Method:

Add 2 tbsp olive oil in a large pan and add the risotto rice, gently heat the rice for 5 minutes.
Add the onion, peppers and mushrooms and cook for another 10 minutes, be careful not to brown the rice. Add the vegetable stock and bring to the boil. Simmer the rice for 30 minutes. You can adjust the cooking time to get the right texture. It is always good to have it slightly wetter than dry. Add the oregano and seasoning and mix well. Serve hot immediately
