1. Broccoli Chicken Brown Rice Salad

Ingredients:

1 cup cooked brown rice
1/2 cup small broccoli, cooked tender crisp
1 cooked chicken breast, diced small
1/4 cup dried cranberries, finally chopped
1/4 cup canola oil
1 tbsp. orange juice
Salt and ground black pepper to taste


Method:

In a large pan, toss together the rice, broccoli, chicken and cranberries. Add the canola oil and orange juice, salt and ground black pepper. Serve with unsweetened milk.

2. Carrot Salad Sand witch

Ingredients:

4 slices whole grain bread
2 tablespoon cream cheese, softened
1/2 cup Grated-Carrot Salad


Method:

Spread the cream cheese and salad between the two slices of bread. Serve with unsweetened milk.

3. Crunchy Chickpea Salad

Ingredients:

2 can of chickpeas, rinsed and drained
4 cups mixed raw vegetables, diced small
1 cup finally chopped parsley
1 cup bottled vinaigrette



Method:

Add all ingredients in a large bowl mix properly and refrigerate overnight. Serve with fruits and a yogurt drink.

4. Rice Cakes with Dried Fruit Sprinkles

Ingredient:

3 tbsp. cream cheese
1/6 tsp. ground cinnamon
2 plain rice cakes
2-3 Tbsp. dry fruits
Salt and pepper according to taste


Method:

Add cream cheese and cinnamon in a bowl. Spread over the rice cake. Sprinkle some dry fruits on it. Serve with unsweetened milk.
