Examples of Recipes for Egg Allergies

1. Wacky cake

Ingredients:

1/2 cup flour
2 tbsp cocoa powder
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 tbsp vinegar
5 tbsp oil
1 tsp vanilla
1 cup water


Method:

Preheat oven to 350F. Put all dry ingredients in a bowl and mix thoroughly. Put all wet ingredients in a separate bowl and mix well. Combine wet ingredients with dry ingredients and stir until you get a smooth batter. Pour the batter into greased and floured pan or 10 cupcakes. Bake in oven for about 35 minutes for cake, about 25 minutes for cupcakes.

2. Pumpkin pie

Ingredients:

3 cups canned pumpkin
2/3 cup brown sugar, firmly packed
1/2 cup water
1/2 tbsp cornstarch
1/2 tsp salt
1/4 tsp ground cloves
1/2 tsp ginger
1 pie crust


Method:

Preheat oven to 375F. Mix all ingredients in a Pan. Cook and stir over medium heat until the mixture thickens. Pour the mixture into pie crust. Bake 30 minutes until soft.

3. Cauliflower with mornay sauce

Ingredients:

2 bananas
1 tbsp soft brown sugar
2 tbsp pecan nuts


Method:

Preheat oven to 200°C/180°C. Boil cauliflower in a pan until tender and then drain the water.
Put butter in a saucepan over medium heat. Add flour and stir for 1 minute. Gradually add milk and bring to the boil. Simmer for 5 minutes or until the sauce the thickens. Remove from heat. Add 1/2 cup cheese and salt and pepper according to taste.
Put half the sauce in a bowl. Place cauliflower over mixture and remaining cheese in a bowl. Sprinkle breadcrumb mixture oncauliflower mixture. Bake for 25 minutes until golden brown.

4. Rice nog

Ingredient:

1 cup rice milk
1/2 tsp cinnamon
1/2 tsp pinch nutmeg
1 tsp vanilla extract
1-2 pinches xanthan gum
1 whole clove


Method:

Mix all ingidients together except xanthan gum. Cook and Stir well for 5 minutes. Add xanthan gum, and warm again. Bring to boil until the mixture thickens. Pour into a large cup and serve immediately.
